Ingredients
- 1 3/4 cup dried black beans
- 1 white onion (chopped)
- 2 carrots (chopped)
- 2 ribs of celery (chopped)
- 4 oz salty pork (rind discarded and pork cut into 1/4 inch pieces)
- 1 3/4 lbs smoked ham hocks (ham)
- 2 gloves garlic (minced)
- 2 teaspoons white pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon dreid organo
- 2 teaspoon salt
PREPERATION
- Cook beans in 16 cups water with carrots, celery, salt pork, ham hocks. Bring to boil and simmer 15 minutes.
