Cricket Green Chile

INCREDIENTS:

  • 3 tablespoons olive oil
  • 2 pounds lean pork, cubed
  • 1 medium onion, cut into large chunks
  • 1 – 2 clove garlic, minced salt and freshly groun black pepper to taste
  • 1 280ounce can diced tomatoes
  • 6 – 8 medium Anaheim chiles, roasted, peeled, seeded and chopped.
  • 4 cups chicken broth
  • 1 1/2 tablespoons all-purpose flour
  • 1/3 cup water
  • 6 – 8 tortillas, warmed
  • 1 can “salsa verde”
