Spaghetti Western (Bison Bolognese)

INCREDIENTS:

  • 1 medium onion, diced (about 1/2 cup)
  • 4 gloves garlic
  • 1.4 cup butter
  • 1 tablespoon olive oil
  • 1 pound bison
  • 1 pound pork
  • 6 – 8 green chillies (diced)
  • 1 green pepper, chopped
  • 1 28-ounce can stewed Italian tomatoes (crushed fire roasted)
  • Pinch of red pepper flakes
  • 1 1/2 teaspoons Worcesterishire sauce
  • 1 1/2 teaspoos angostura bitter
  • 1 tablespoon sugat
  • 1/2 cup dry red wine
  • 1/2 teaspoon sal
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon celery salt
  • 2 bay leaves
  • Dash of cayenne pepper
  • 1 pound spaghetti, cooked al dente and drained
  • Freshly grated parmesan cheese
